Yummy, Healthy Twirly Treats

I’ve had many requests for our Yummy 55-Second Mega Muffin and our Super Delicious Avocado Chocolate Pudding. (Doug calls it the Pole Dancers Choco Delite)

When you make the muffin, sometimes you have to play around with it. If it comes out alittle gooey, throw it back in the micro wave…You’ll have to test it out a bit…once it’s done pop it out and let it cool a bit. Go ahead and get creative with it and add some of your favorites…almond slivers, etc. Love that you can cook it in your favorite large coffee mug.

The avocado pudding is really good, but remember to really mash up the avocado so its not lumpy. Who wants to eat lumpy pudding. I’m a choco-holic so I am pretty picky when it comes to chocolate…but this is really good stuff! I don’t post about things I haven’t tried. So trust me when I say its worth the time to try these out!

Mega Muffin

(mix it in your large coffer mug)
1/4 c almond flour, or flax meal
1/4 c protein powder
1 tsp coconut oil (I sometimes add alittle more)
2 tsp Cinnamon
1 tsp Stevia or honey
1 tsp baking powder  and 1 large egg

Put all of this in a large coffee cup and stir. Add almond slices, flax seeds, raisins for kicks…Put in micro…55 to 60 sec (depends on your micro) When its done turn the cup upside down and hit the side until it pops out. If the top looks alittle gooey throw it back in for a few more seconds. Top it with almond butter, coconut oil, or Kerry Gold better from Trader Joes

Avocado Pudding

1/2 of a ripe avocado (no joke!)
3 tbsp of Almond Butter
1/4 cup almond or coconut milk  (I used coconut milk)
2 heaping tbsp of cocoa powder

( I got Hershey’s dark cocoa powder, 100% cacao)
1/2 tsp of vanilla
1 packet of Stevia (around 1 tsp)
1/2 – 3/4 scoop of chocolate protein powder ( I used vanilla, get my 5lb bag from Costco) and a pinch of sea salt

Mix the avocado and almond butter in a bowl and really mash it up! You want it really smooth.  Add all other ingredients and mix it well. Sometimes I add alittle more protein powder for consistency and I “freestyle it by throwing in shredded coconut, almond slivers, etc. Chill it and enjoy
